Feel free to make this recipe your own by adding any ingredients you want: your own curry mixture, potatoes, or even tomatoes.

What You'll Need:

  • Whole cut up chicken or a combination of legs/thighs

  • Garlic

  • Bell peppers

  • Onions

  • Olive oil

  • Salt

  • Black pepper

  • Goya Adobo

  • McCormick original chicken seasoning

  • Walkerswood traditional jerk seasoning

  • Kitchen Bouquet For Meat, Gravy & Stew Browning & Seasoning Sauce

  • Rice

  • Optional: curry powder, tomato, cilantro, turmeric, mustard (dijon), seasoned bread crumbs

How To Make It:

Rinse chicken and remove the skin under cold water.

Combine onion, garlic, black pepper, Walkerswood traditional jerk seasoning (optional: cilantro, and tomato) into a food processor.

Put the chicken in a bowl and sprinkle a little bit of salt over it...NOT TOO MUCH! Season the chicken with black pepper, Goya Adobo, and McCormick original chicken seasoning. Add the onion/garlic/black pepper/jerk seasoning mixture to the bowl and then stir up the chicken. Lastly, put a lid over the bowl and set it in the refrigerator for 1-3 hours.

While the chicken is in the refrigerator, maximize your time by boiling rice. Rinse the rice until the water is clear then boil it. Once the rice boils for a few minutes, bring the temperature to low.

Add olive oil, a bit of water, and some more McCormick original chicken seasoning to a pan(medium-low heat). Let the pan get hot before adding the chicken.

Once the pan is nice and hot add the chicken and all of the contents in the bowl.

While the chicken is cooking keep the lid cracked slightly

Stab the chicken with a knife in multiple spots so the chicken will cook evenly. Keep an eye on the chicken making sure the sauce doesn't dry and burn. Use water if the sauce is dry, and add seasoned bread crumbs or chopped potatoes if the mixture is too thin/watery

Feel free to add bell peppers, mushrooms, potatoes, or any vegetable that you see fit. Occasionally stir the chicken... let it cook until the sauce is thick and the chicken is DONE. Pour in a little bit of kitchen Bouquet For Meat, Gravy & Stew Browning & Seasoning Sauce for a beautiful brown color and a delicious taste.

Don't forget to spoon some sauce over the top of your meal! Enjoy!
